Shondesh Modak

Shri Ganeshaay Namah
On the auspicious occasion of Ganpati I am going to prepare Modak with a different style and twist of Shondesh within.
So let's start prepare the Modaks ,the favourite of Lord Ganesha.
Ganpati Bappa Morya

Ingredients
1. Milk - 1 Litre
2. Lemon juice of 2 Lemons
3. Powdered sugar-4tbsp
4. 12-15 Threads of saffron soaked in 2 tbsp milk.
5. Cashew nuts-4nos chopped
6. Almond-4nos. Chopped
7. Raisins(Kishmish)- 12nos. Chopped
8. Pistachio-6nos Chopped
9. Cardamom powder-1tsp
10. Chilled water (with ice cubes)
11. Khoa (Khoya)-1tbsp
In addition to these you need a Modak Mould to give it a perfect shape and design.
Method of Preparation
Step 1: Take a deep vessel and transfer 1 litre milk to it.Then turn on the stove and put that deep vessel on it to boil the milk.
Step 2: As soon as milk starts boiling turn off the gas and add 1/2 glass of chilled water to it.
Step 3: Now start adding lemon juice by a small spoon till the milk gets curdled.
Step 4: Drain the water and keep the curdled milk.
Step 5: Now add 1 glass chilled water and wash the curdled milk with soft hands.After washing,drain the water and keep the curdled milk.
Step 6: Now transfer the curdled milk to a cloth and hang it for 2 hours. 
Step 7: Meanwhile let's start the preparation of Stuffing.
Step 8: Add all chopped dry fruits(sl. No. 5 to 8 of ingredients), cardamom powder , 1 tbsp powder sugar and1 tbsp milk to khoya and mix them well to make the stuffing.
Step 9: After 2 hours take out the curdled milk from the cloth and rub it with the help of your palm.

Step 10: Add 4 tbsp powder sugar to the curdled milk.
Step 11: Turn on stove  ,put a deep vessel ,keep the flame low and transfer the curdled milk to the vessel. Roast the curdled milk on low flame for 4-5 minutes only and then turn off the flame.
Step 12: Transfer the roasted curdled milk to a plate and add the milk of  saffron threads( sl. No.4 of ingredients).
Step 13: Again rub it with soft hands to make the curdled milk dough.
Step 14: Now grease the Modak Mould with ghee.
Step 15:  Fill one part of the mould with curdled milk dough of step 12 and add stuffing of step 8 to it.
Step 16: Now cover the stuffing with some curdled milk dough and press with the other part of the mould.
Step 17 : Now open the mould and take out the Shondesh Modak.
Repeat the step 13- 16 with remaining material.

Your Shondesh Modak are ready.
