Recipe of Raj Bhog
Ingredients
1.Paneer - 200 grams
2. Sugar - 1.5 Cup
3. Pistachio - 10-12 nos.finely ground
4. Orange Food colour
5. Semolina - 1 tsp
6. Chilled Water - 1 Bowl
Method of preparation
Step1: Add semolina to the paneer and mince the Paneer with the help of your palm for 10- 15 minutes to make a dough of it.
Step 2: Make small sized balls of equal size out of the dough.
Step 3: Take one ball out of those balls and mix ground pistachio in it.
Step 4: Now stuff 1/2 tsp of pistachio mixture of step 3 into the remaining balls.
Step 5: Now take a cooker add 6 cups of water and sugar. Boil the sugar and water mixture on high flame.
Step 6: As soon as the water starts boiling add all those stuffed balls to it and cover the cooker with a lid and let it cook for 30-35minutes.( Do not pressure cook)
Note :
a. Keep flipping the balls time to time by unlidding the cooker.
b. If water level downs keep adding the warm water to maintain the level. So you have to make arrangement of warm water before starting this step.
Step 7: Now after 30-35 minutes you will notice that the size of the balls gets doubled. At this point of time turn the flame off.
Step 8: Now take out the chilled water from refrigerator and add a pinch orange food colour and then put all the balls in it. Let the balls in the chilled water for 2 hours at room temperature.
Step 9: Meanwhile start boiling the sugar syrup left in the cooker to make the syrup a bit more thicker. Do not make it very thick.
Step 10: Take out the syrup in a separate bowl and add a pinch of orange food colour.
Step 11: Now take out the balls from the chilled water after 2 hours and press each balls gently between your palm to drain out the water.
Step 12: Now put these balls in the sugar syrup that you have made in step 9 & 10 and keep it in refrigerator for 10 hours.
After 10 hours Your RajBhog is ready. You can serve it with a garnish of chopped pistachio and strands of saffron.
