Egg Korma
Ingredients
1. Boiled Egg 4 nos.
2. Onions 2 big size
3. Cloves of Garlic 6 nos.
4. Ginger 1 inch
5. Almonds 6 nos soaked in water and peeled
6. Cashew nuts 6 nos.
7. Poppy seed 1tsp(optimal)
8. Ghee 1tsp
9. Refined 2 tsp for gravy
10. Cinnamon stick 1inch
11. Green Cardamom 3 nos.
12. Cloves 5 nos.
13. Turmeric powder 1/2 tsp
13. Red Chilli powder 1/2 tsp
14. Cumin powder 1/2 tsp
15. Coriander powder 1 tsp
16. Green chillies 4nos. Slitted
17. Curd 3 tbsp beaten
18. Salt to taste
19. Kewda Essence 1 tsp
20. Milk 1 cup
21. Kesar threads 8-10 nos. Soaked 1/4 cup of milk
22. Kasoori methi
21. Garam Masala 1/2 tsp
Method
Step 1: Slice one big size onion and fry them in refined to golden brown.
Step 2. Take another big size onion and slice them and in the same oil fry them on low flame along with ginger, garlic Cloves , almond, Cashew nuts and poppy seeds till they get translucent. After this rest it to cool in separate plate.
Step 3: Now , in same pan add 1 tbsp ghee and 2 tbsp refined let it heat up. In the
meantime add some turmeric and salt to the boiled eggs and then fry these eggs in that oil as shown in pic. Now, take the eggs out of the pan and keep them aside.
Step 4: In the meantime your onion masala which you have made in step 2 is now cooled. Now, grind this masala to a fine paste.
Step 5: In the same oil add all Whole spices fry it for 20 seconds and add the ground onion Masala of step 4 and cook it for 3-4 minutes on low flame and keep stirring while cooking it otherwise your masala may burn.
Step 6: Now add turmeric powder, cumin powder, Red chilli powder and slitted green chillies and cook it for 1 minute in low flame. Then add 1/4 cup of water and put the lid on and let it cook for 2-3 minutes on low flame.
Step 7: Now remove the lid and add beaten curd and stir it well and cook it for one minute.
Step 8 : Add the fried eggs and salt to taste ,stir the well, put the lid on and cook it for 1-2 minutes.
Step 9: After this remove the lid and add 1 cup Milk and soaked kesar & it's milk , fried onion of step 1, Kewda Essence. Now , close the lid and cook it for 4-5 minutes.
Step 10: Now add garam Masala and Kasoori methi & 1/4 tsp ghee and stir it well . Turn your stove off . Your Egg Korma is ready
You can enjoy this egg korma with chapati/paratha and jeera rice.
