Gatte Ki Sabji

Ingredients
1. Besan ( Gram Flour )    1 Cup
2. Curd 2 tablespoon
3. Salt to taste for gravy and making dough
4. Ajwain (Carrom Seeds)+ Coriander seeds+ Kalonji( Nigella)  2 tsp
5. Haldi (Turmeric) 1/4 tsp for dough
6. Red Chilli powder 1/2 tsp for dough
7. Onion 1 nos. Big finely chopped
8. Cumin seeds 1 tsp
9. Ginger Garlic Paste 1 1/2 tsp
10. Green Chillies 2-3 nos. 
11. Red chilli powder 1/2 tsp for gravy
12. Coriander powder 2 tsp
13. Turmeric 1/2 for gravy
14. Kitchen King Masala 1 tsp ( any brand)
15. Garam Masala 1tsp
16. Few Kasoori methi ( fenugreek leaves) any brand 
17. Curd for gravy    1/2 cup
18. Coriander leaves for garnishing
19. Refined Oil      3 tablespoon
Method:
Step 1: Make dough of Besan by adding Curd , Kalonji , Ajwain, coriander seeds Haldi, salt and Red chilli powder. Consistency should be same as that of dough for chapati. Grease the dough with oil. Water can also be used to adjust the consistency of the dough. For making the gatte your dough should be thicker.
Step 2: Break the dough into small balls and gives these balls a shape of cylinder.
Step 3: Boil 2 glass of water in pan and add these cylinders in the boiling water and let it cook for 7-8 minutes. When these 
cylinders come up to the surface of water turn of the stove and take them out on a plate 
Step 4: Cut these cylinders into small discs.The discs are called GATTE
Step 5: Turn on the stove, put a pan on it add refined oil and let it heat up.
Step 6: Fry the Gatte in the oil for 2 minutes on high flame and take them out.
Step 7: In the same oil add cumin seed . When it starts spluttering add chopped onions and green chillies. Cook the onions till it gets light brown.
Step 8: Add ginger garlic paste and cook till its raw smell fades.
Step 9: In the meantime take the curd for gravy in a bowl and add haldi, coriander powder, kitchen king masala , garam Masala, red chilli powder and salt. Mix them well.
Step 10 . Add the mixture made in step 9 to the pan in which you are cooking till step 8. After adding keep the flame high and stir the gravy for 1 minute. Now reduce the flame to low and put the lid on pan on and cook it till oil separates. In due course ,stir the gravy occasionally otherwise your gravy may burn and stick the pan.
Step 11. When oil separates from the gravy add the all fried Gatte and mix them well. 
Add some water to adjust the thickness of gravy as per your requirement.
Step 12 : Add crushed Kasoori methi in the gravy. Add cook it for 5 minutes.
Step 13 : After 5-6 minutes ,turn off the stove and your GATTE KI SABJI is ready.
Garnish it with Coriander Leaves and satisfy your taste buds with chapati and rice.
