Chhola (Kabuli Chana) Simple Home style

Ingredients:( for 3-4 persons)

1. Kabuli Chana( Chhola) 150 gms soaked overnight in water.
2. Onions 2 Medium sized
3. 7-8 cloves of garlic
4. Tomatoes 2 Medium sized
5. Green Chillies 3 nos.
6. Whole spices (7-8 black pepper, 3-4 Cloves,1 small cinnamon stick,. 2 green cardamom,1-2 bay leaves and 1 teaspoon cumin seed)
7. Ground spices ( Turmeric 1/2 teaspoon, Coriander Powder 2 teaspoon, Garam Masala 1/2 teaspoon, Chhola Masala 2 tbsp of any brand)
8.  Coriander leaves for garnishing
9. Salt to taste
10. Cooking soda 1/2 teaspoon 

Method:

Step 1: Keep chhole in pressure cooker and add one green chilli, salt 1 tsp and cooking soda 1/4 tsp .
Step 2: Close the lid of Pressure cooker and put it on the stove turned on.
Step 3: In the meantime, make a paste of  onion ,garlic and green chillies together and chop the tomatoes finely.
  
Step4: After 4-5 whistles turn the stove off and take out the chhole in a bowl . Keep the water stock of chhole do not waste it.
Step 5: Put kadai/pan on the stove add oil and let it heat up.
Step 6 : Add all whole spices to heated oil.
Step 7: After 1 minute add onion garlic chilli paste and cook it on medium flame till the paste turns brown.
Step 8: After this add finely chopped tomatoes and cook for 3-4 minutes with kadai lid on.
Step 9 : Add all ground spices ,Chhola Masala and a cup of chhole water stock . Mix it well and cook till it leaves oil from sides and surface.
Step 10: After this add chhole with its water stock and let it cook on medium flame till chhole gets tender. Meanwhile you can add some more water to adjust the thickness of gravy.
Your simple and tasty chhole is ready, garnish it with coriander leaves . Please have it with chapatis and rice.
